Tiramisu

Apparently you’re not supposed to compliment your own cooking... but this is the best tiramisu ever! You’ll need: 


4 egg yolks
100 grams caster sugar
150 grams double cream
227 grams mascarpone 
About a cup of espresso/instant coffee
2 tablespoons rum 
2 tablespoons cocoa powder (I used green and blacks unsweetened cocoa) 
About 24 ladyfingers or 16 sponges (sponge biscuits from Tesco) 

Method

  1. Add the sugar, egg yolks, and half the amount of sugar (50 grams) into a bowl and whisk until the mixture has doubled from its original size

  2. In a separate bowl add the other half of the sugar (50 grams) the heavy cream, and mascarpone, whisk until peaks form

  3. Fold the egg yolk/sugar mixture into the cream/mascarpone mixture

  4. In a shallow dish, add about 200 grams of espresso coffee and the rum

  5. When this is completed start assembling the tiramisu: start by sprinkling cocoa powder to the bottom of a dish, then dip the ladyfingers/sponges into the coffee mixture (only dip the biscuits in the coffee for a few seconds or the tiramisu will turn out soggy) Lay the biscuits side by side until they cover the whole dish, cover in the cream, and repeat: biscuits, cream, and then cover the top with cocoa powder

  6. Refrigerate for at least 6 hours

  7. And enjoy!
