Apple Rhubarb Crumble
My secret recipe Apple Rhubarb Crumble is delicious, add honey or syrup infused oats for EXTRA deliciousness. Use whatever apples you have but a mix of Granny Smiths and Gala apples are great tangy and sweet combination. You can bake straight away or leave it in the fridge for a couple of hours for extra deliciousness. All you’ll need is:
For the filling
3 Granny Smith Apples
1 Gala Apples
2 Rhubarb Sticks
2 tablespoons caster sugar
2 tablespoons brown sugar
1 tablespoon cinnamon
A pinch of nutmeg
40-50 grams of flour
For the crumble topping:
150 grams flour
115 grams cubed cold butter
140 grams brown sugar
80 grams honey/syrup oats
1 teaspoon cinnamon
Method
Peel and core the apples and rhubarb
Add the apples and rhubarb to a pan glazed in butter and fry for 3-4 minutes
Add the sugars, cinnamon, nutmeg and flour to the pan and cook for a further few minutes, set aside
For the crumble topping add flour, butter, sugar, oats and cinnamon to a bowl and mix thoroughly until all the ingredients are combined, you’ll want a fine and none lumpy texture
Add the apples to the bottom of a baking dish and add about 1 inch of crumble on top
Sprinkle with brown sugar and bake for about 40 minutes on 180 degrees
Serve with vanilla ice cream or custard!
