Homemade Pizza

The dough, the tomato base, the cheese! This is a full proof pizza recipe! You’ll need:

Pizza dough 
280 grams warm water 
2 1/4 teaspoon active dry yeast 
3 tablespoons olive oil 
1 tablespoon honey 
460 grams of 00 flour or plain flour
Large pinch of salt (about 1-2 teaspoons) 

Tomato Base 
1 x onion 
2 garlic cloves or 1-2 tablespoons of garlic paste 
2 x tablespoons of tomato paste 
1 x tin of chopped tomatoes 
A bunch of Basil Leaves 
A sprinkling of sugar 
Salt and Pepper 

Toppings 
Mozarella cheese 
Buffalo Mozarella 
Chestnut mushrooms/portobello mushrooms 
Basil 

Method (Pizza dough)

  1. Pour yeast and warm water into a bowl, mix until all the yeast has dissolved, cover in cling film and leave to rest for 10 minutes

  2. After 10 minutes the olive oil and honey to the mixture, cover in cling film and rest for another 10 minutes

  3. After 10 minutes, add in the flour and salt

  4. Mix the dough until dense enough to start kneading, then add flour to work surface and knead consistently for 10-15 minutes (a good dough is all up to the kneading so make sure to do this well! If its too tiring ask a friend/family member to help and take turns!)

  5. Cover in cling film, wait until its doubled in size before you prepare the pizza (this will normally take between 1-2 hours)

  6. When its doubled in size, flour the work surface, and roll the dough out, making sure to flip it consistently and add flour to the surface so it doesn’t stick

Method (Tomato Base)

  1. Add olive oil to a frying pan

  2. Add finely chopped onions and fry until slightly brown and translucent

  3. Add garlic and tomato paste

  4. Cook for a further few minutes then add a can of chopped tomatoes and a cup of chicken stock

  5. Then add salt, pepper, fresh basil and sugar

When you’ve completed both the dough and the tomato base, transfer the rolled out dough to a pizza tray and cover in your homemade tomato sauce, cheese and favourite toppings, bake for approx 10 minutes on your highest oven setting!
