Springtime Quiche
The perfect quiche for a spring or summer day, take it to the park for a picnic or enjoy at home with a cup of tea or glass of Prosecco! You’ll need:
For the pastry
200 grams plain flour
2 tablespoons water
140 grams cold cubed butter
1 egg yolk
For the egg/cream filling
100 grams Gruyère cheese (1 cup)
3 eggs
150 ml thickened cream (approx a cup)
125 ml whole milk (approx half a cup cup)
Teaspoon of salt and pepper
Filling (veggies)
Fried mushrooms
Fried red peppers
Fried red onions
Mushrooms
Spinach
Turkey bacon or regular bacon (simply omit this if veggie)
Method
To make the pastry add flour, butter, egg yolk, and 2 tablespoons of water to a bowl
Mix until all the ingredients are completely combined (the pastry should be completely smooth with no lumps… a little bit like play dough!)
Roll the pastry in a ball and wrap in cling film, refrigerate while you prepare the filling
To prepare the filling simply add the eggs, cream, milk, salt and pepper to a dish
Prepare a range of vegetables for the vegetable, what you add is completely up to you, but mushrooms, red peppers, spinach, red onions and turkey bacon make a lovely filling (I would fry these in olive oil for extra tastiness)
Now roll the dough. Roll it out into a circular shape (remember to continuously flour the surface and flip the dough so it doesn’t stick)
Place into a tin and blind bake for approx 15 mins or until slightly brown
Once thats done, add the cheeses to the bottom of the quiche, then the vegetables, and then cover with the cream filling
Bake for approx 40 minutes on 180 degrees
Garnish with tomatoes and parsley
