Vegan Summer Rolls

Adoric Vegetable Slicer/Spiraliser
Vietnamese Rice Paper
1 Courgette
1 Carrot
1 Cucumber
Coriander
Mint
Lettuce
Peanuts
Rice Noodles (parboil for a few minutes)
Easy Peanut Dipping Sauce
3 tablespoons Peanut Butter
1 tablespoon Olive oil
1 teaspoon White Wine Vinegar
1/2 teaspoon sugar
Garnish with peanuts

Method
Set your vegetable slicer to the appropriate setting. If you are using the Adoric spiraliser, set it to either setting one or two
Begin spiralising the vegetables: you do this by turning the vegetables clockwise on top of the spiraliser. Once you are nearly finished spiralising the vegetable, ensure to use the plastic top to push down on the vegetable so that you don’t slice your fingers!
Once all your vegetables have been spiralised its time to assemble the rolls. First soak a piece of Vietnamese rice paper in hot water for about 10 seconds, then place it on the work surface. Add the spiralised vegetables, lettuce, chopped coriander/mint, cashews and rice noodles on top of the rice paper then roll. Ensure to tuck in the sides before you finish rolling so that the rolls don’t break or leak. Repeat.
Cut the rolls in half and serve with peanut sauce
