Chicken Stroganoff
It’s easy and it’s delicious... you’ll need:
Chicken marinade
3 chicken breasts, chopped into tiny fillets
garlic powder
paprika
salt
black pepper
cornflour
Butter
Olive oil
Sauce
1 large onion, (optional 2 shallots if you have)
3 cloves garlic
Packet of mushrooms (I used a mix of chestnut and wild mushrooms)
A teaspoon of Mustard (powder or normal)
Paprika
Dry white wine
2 cups chicken stock/broth
A few drops of Worcestershire sauce
Teaspoon of Salt and pepper
A cup of sour cream
A cup of Fresh chopped parsley
Method
Begin by chopping the chicken, you will want to chop the chicken in small cubes
Once you’ve chopped the chicken, prepare the marinade. Add the ingredients listed above for the chicken marinade to the chicken and mix well ensuring everything is thoroughly combined
Once thats done, begin the sauce. You’ll start by adding onions to a pan of olive oil and frying until brown and translucent
Add garlic and fry for a further few minutes
Once this is done, add chopped mushrooms to the pan
Add a drop of soy sauce and set aside
In another pan, fry the chicken in olive oil
Once completely cooked add to the pan of onions/mushrooms and mix well
Add chicken stock to the pan (homemade chicken stock, store bought chicken stock, or simply water and a chicken stock cube mixed with hot water will work well)
Add sour cream
Add paprika, mustard/mustard powder, Worcester sauce, salt and pepper
Finish off by adding a dry white wine, finely chopped parsley and parmesan to the sauce
Simmer on a low heat for as long as you like, a few minutes will do
Serve with rice and garnish with parsley
and enjoy!
